Chewy Oatmeal, Chocolate Chip AND Walnut Cookies

Almost a week ago I threw out my back, or maybe I pinched a nerve, or perhaps a disc slipped or it bulged.

Whatever it was, it’s had me laid up flat on my back (no pun intended) for SIX days.

I enjoy a good old fashioned do nothing lazy day as much as the next guy but S-I-X days, that’s getting a little excessive.

Truth be told, I’m not totally “flat on my back”, after about two very helpless days, I was able to stand up and after getting used to being on my feet by walking like a grandpa for a bit I was actually OK walking around.

So I can lay down and stand up, but sitting.  That’s the bitch.  Sitting HURTs.  A LOT.

And since my job involves the above mentioned activity, I’m at home, laying around (literally) and occasionally standing.

It’s been a pretty dull week.  I’ve watched A LOT of bad daytime TV and spent A TON of time on Facebook (you would be shocked how seldom anything changes when checking the ‘Book every two minutes.)

So today I decided to mix things up a bit.

I baked.

Well technically, I baked some of the most delightful chewy chocolaty goodness in the world.

Alright maybe the world is a bit of an exaggeration but these are some really REALLY good cookies.

Just a pinch of salt and Voila!

I like salt on grapefruit.

So did my Grandma Carmen <3

I also like salt on lemon, much to my orthodontists dismay.

But these days I like salt on my cookies.

Say what?

That’s right.

Salt on my cookies, double chocolate cookies with sea salt to be exact.

Just a pinch.

To bring out the rich oh so delicious dark chocolate flavor.

When it comes to chocolate cookies, I think this might be the only way to make them.

Nothing against chocolate chip, they’re good too.

But… I kind of think… forgive me…

I know.

That these are better.

I realize that’s a pretty bold statement, but it’s true.

Cookies for Fat Girl Day… or really any day

You are beautiful in every single way...

Fat Girl Day: A joyous occasion that is best enjoyed by two fresh college students not yet affected by that metabolism thing.

The occasion is celebrated by eating copious amounts of Taco Bell, Chile con Queso (read: melted Velveeta Cheese Product and Salsa), Ben and Jerry’s and, for Isa and I, these store bought fabulously chewy and dangerously addicting Molasses cookies.

Please understand that this occasion had nothing to do with bad break ups, stressful midterms or really anything to do with eating ones sorrows away. It had more to do with it being Sunday, maybe a little cold outside and our new access to HBO thanks to the included college dorm cable.

Flash forward ten years.

Fat Girl Days still exists. Celebrated once a year, usually around the holidays, when those same two ladies find themselves in the same zip code.

But these days, given that whole metabolism thing, Fat Girl Day isn’t quite as processed and a little more homemade.

And this year I get to reintroduce one of our Fat Girl staples! The Sweetie approved (I made these this weekend: Sweets ate 8.  In one night) homemade edition!

Chocolate Chip Cookies

Cookies

Cookie anyone?

There of those of us who can cook and those of us who can bake.

So far baking hasn’t been my thing.

Whereas cooking has plenty of rooms for recipe tweaking, baking (at least in my experience so far) seems to require things to be a bit more exact.

Somehow I always end up with a sunken-in cake, gooey brownies (like raw gooey not yummy gooey) and don’t even get me started on icing things – just rest assured it’s a mess.

But recently my most wonderful little sister gave me a darling apron decorated with cupcakes (which I also manage to mess up) as an early birthday present. The gift seemed to ignite a random baking urge so I decided to take a shot at baking the one thing I knew I could make well – actually, pretty damn well if I don’t say so myself.

Chocolate Chip Cookies – no funny business – just flour, sugar, eggs, butter, chocolate chips and one classic recipe courtesy of Nestle Tollhouse.

They’re easy and always a treat but I warn you, bake these with plans of removing them from your home as soon as possible, to ensure that you (I) don’t eat them all.

Luckily I work at a newsroom and news folks will eat anything set out for public consumption without even so much as a, “Hey, is this the same open thing of dip that was here yesterday?”

So combine a newsroom with the restaurant Sweets works at and you can be assured that one way or another every single one of those cookies would have a loving home to take them in… or at least a satisfied tummy to spend their final days.

This recipe is not mine and not at all tweaked – it’s probably the only recipe I have ever followed exactly – like I said before when it comes to baking it’s best to leave the funny business elsewhere and just do what you’re told.

So grab a bag of Nestle Tollhouse Chocolate Chips, look on the back and there’s your recipe.
