Strawberry, Goat Cheese and Almond Salad

Strawberry season is upon us!!!!!

Are you excited? You should be.

Sweet, delicious, perfectly plump strawberries! I’ll any them in any shape and/or form and in whatever dish they find themselves in, sweet or savory, I do not discriminate.

Most of the most delicious things in life have some sort of strawberry influence.

Strawberry milkshakes, strawberry cobbler, strawberry cake, strawberry shortcake!, strawberry jam, strawberry rhubarb pie, strawberry chapstick, strawberry tequila, strawberry margaritas… and… like a billion others.

My Dad’s favorite is strawberry sandwiches; I’m still not quite sure how you make those, but he WILL NOT stop talking about them.

You know what else is ridiculously delicious?

Strawberry salads…

Mix some fresh strawberries in with greens, slivers almonds and goat cheese and you’ve got yourself quite the treat for dinner or lunch or brunch or whatever meal it is you’re eating.

Sweets and I made this salad a week ago for dinner and topped it with some grilled bird and it was SPECTACULAR!

I’ve had a variation of the salad at a billion restaurants but I think my own take on it was much better, probably because I got to add as many strawberries as I wanted! Success!

Spicy Shrimp Tacos with Strawberry, Mango & Avocado Salsa

Ole'!

Every time I go to a restaurant and fish or shrimp tacos are on the menu I order them.

And then I talk about how easy they would be to prepare and tell Sweets how we should really make them for dinner that next week.

Up until last night these grand fishy taco plans have been all talk and no action.

The other night, or maybe it was early morning, I am pretty sure Sweets was talking in his sleep.  He said something about dinner, then something about shrimp quesadillas with strawberry tropical salsa.  Or maybe it was me that was listening in my sleep?  Either way the suggestion, while blurry, stuck with me and so a couple days later when putting together the list for that weeks grocery shop I revisited that sleepy suggestion.

So let’s pair said sleepy suggestion with the previously mentioned “I could make this” proclamation and you get:

Fresh Delicious Strawberry Margaritas

Strawberry Margarita Success

I’m kind of a bad New Mexican.

I’ve lived here a good chunk of my life with a childhood stint in Virginia and a young adult stint in New York.  But still, New Mexico has been and will likely always be home.

Although I’m discovering I don’t know or participate in much beyond my own little bubble.

I’m sure I’ve drove through most of the state at some point in my life but I can’t recall actually stopping and visiting more than a small  hand-full of towns throughout the state.

As for local events, fiestas and traditions. I usually skip them.

I’ve never been on the Tram or cheered on the Isotopes (although I have been to several Dukes games).

My local sight-seeing pretty much stopped around the same time field trips did.

I’m learning new things all the time about the state of which I call myself a native.  But it’s not so much a “new and exciting learning never stops” kind of variety, it’s usually stuff I really should know.

This past Good Friday I was going over the morning stories with a reporter and friend of mine.  When she told me she was going to Tome Hill.  I thought to myself, “Where the hell is Tome Hill?” but cautiously asked “What’s going on there?”

Her response, “Uh, it’s Good Friday?  And you call yourself a New Mexican!”

Apparently the tradition to walk to three crosses atop this symbolic hill on Good Friday is a tradition that has been going on since after World War II.

I have never in my life heard of this tradition.

Sharon (the above mentioned reporter and friend) who recently moved here from Louisiana is becoming increasingly skeptic of my true native status.  If I were President Obama and she was crazy, you might even say she was a “birther.”

I should mention Sharon’s been here for less than 6 months and has already been to an Isotopes game.

So maybe I don’t know much about faithful walks and maybe I don’t frequent the small towns of my home state and maybe I hate Zozobra… sue me!  I bet I know how to make it up to you?

Sunshine and Strawberry Infused Tequila

Would you like some tequila with those strawberries?

The sun is shining and temperatures are nearing 80 degrees which means it’s time to switch out your sweaters for tank tops, turn on your ceiling fans and make yourself a margarita!

And not some gross, over-sugared, tasteless margarita using Jose Cuervo pre-made mix – I’m thinking something super fresh, on the rocks with a lightly salted rim… ohhh and let’s make it a strawberry one!

And to answer your question.  Yes.  You can enjoy a fresh strawberry margarita without a thick sticky strawberry puree and you can even have it on the rocks.

Now, how can you make such delicious harmony a reality in your own home (and tumbler)?

Well it takes one of my least favorite virtues.  Patience.
